Non starchy vegetables are a great source of vitamins and minerals and are very nutrient dense. Vegetables such as cauliflower, asparagus, zucchini, mushrooms, broccoli, peppers, celery, onions and a long list of others, have a low impact on blood sugar and fill you up.

Try roasting for intense and delicious flavor. Spray some non stick cooking spray on a roasting pan, add your favorite vegetables and place in a hot 425 degree oven for about 25 minutes.

Remember not to overcrowd your pan so you get a nice browning.

Even if you are trying to lose weight – most everyone can eat as many nutrient dense vegetables as they’d like – as long as there are no added fats and sauces.
